Nel 1999 due antropologi americani, Paul W Sherman e la sua studentessa Jennifer Billing, si sono messi di impegno ed hanno sostenuto scientificamente un approccio di tipo darwiniano al perchè utilizziamo le spezie in cucina, dando alle stampe il risultato dei loro studi in questa pubblicazione scientifica: "Darwinian gastronomy: Why we use spices - Some like it hot" .
